Gluten-Free Peanut Butter Blondie Cookies
You can’t tell me that when there’s a plate of freshly baked cookies sitting in front of you, your desire to take a bite is at nil. Come on now. With this in mind, we’ve got a delicious “cheat” dessert recipe for you that’s grain free, gluten free, and easy on your belly!
Ingredients:
- 1/2 cup natural peanut butter
- 12 oz chickpeas ( soak overnight – drain and rinse)
- 1/4th cup coconut flour
- 1/2 cup of 100% maple syrup
- 1/2 tsp baking soda
- 1/2 cup dark chocolate chips ( Optional vegan chocolate chips )
Directions:
- Blend all the ingredients in a food processor ( except dark chocolate chips)
- Fold in dark chocolate chips
- Line a baking dish with parchment paper and add the cookie batter.
- Bake at 350 degrees fahrenheit for 60 minutes
- Let cool and enjoy.
- Store your freshly baked delicious cookies in the fridge
