Let’s Make Grain-Free Chocolate-Coconut-Banana Brownies
Looking for a delicious, yet equally healthy treat after a healthy meal? Check out these adzuki brownies!
Ingredients:
- 1 can Adzuki beans (drained and rinsed)
- 3 over-ripe bananas
- 1/4 heaping cup coconut flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp high quality organic vanilla
- 1 tsp baking powder
- Toppings: Choose any of the following: nuts, vegan chocolate chips, berries, cacao nibs, shredded coconut.
Directions:
- Blend bananas and adzuki beans in a food processor
- Add remaining ingredients, blend together
- Line 9×5 standard bread pan with parchment paper, fill with mixture and spread evenly
- Add toppings of choice, or plain, both are delicious!
- Bake at 350 degrees for 45 minutes (they’ll be a little soft)
- Cool completely and refrigerate to set
- Enjoy!
- Store uneaten goodies in fridge for no more than a couple of days
