Peanut Butter Blondie Cookies

You can’t tell me that when there’s a plate of freshly baked cookies sitting in front of you, your desire to take a bite is at nil. Come on now. With this in mind, we’ve got a delicious “cheat” dessert recipe for you that’s grain free, gluten free, and easy on your belly!

Ingredients:

  • 1/2 cup natural peanut butter
  • 12 oz chickpeas ( soak overnight – drain and rinse)
  • 1/4th cup coconut flour
  • 1/2 cup of 100% maple syrup
  • 1/2 tsp baking soda
  • 1/2 cup dark chocolate chips ( Optional vegan chocolate chips )

 

Directions: 

  1. Blend all the ingredients in a food processor ( except dark chocolate chips)
  2. Fold in dark chocolate chips
  3. Line a baking dish with parchment paper and add the cookie batter.
  4. Bake at 350 degrees fahrenheit for 60 minutes
  5. Let cool and enjoy.
  6. Store your freshly baked delicious cookies in the fridge
