Let’s Make Coconut Banana Pancakes
Honestly, who doesn’t love pancakes? Glad we got that out of the way. Now here’s the better question – who loves pancakes but can’t tolerate gluten or grains of any kind? What are you to do? The answer, of course, is Coconut Banana Pancakes! This recipe will resolve your pancake craving and leave you walking away pain-free.
Ingredients :
- 2-3 large ripe bananas
- 3 Eggs
- 3 Tbsp of coconut flour
- 2-3 Tsp of coconut oil
- Dash of cinnamon
Toppings
- Your favorite berries
Directions:
- Mash bananas in a bowl until smooth
- Add in 2 whole eggs +1 egg white and cinnamon , whip into a mixture
- Add in coconut flour slowly. Let stand for a few minutes before cooking. Mix again before cooking
- Add coconut oil to pan on Medium. Add in batter to your size preference for pancakes, we like to make them small, as they are easier to work with. Cook 2-3 minutes per side.
- Serve your pancakes and add mashed berries on top!
