Let’s Make Grain-Free Chocolate-Coconut-Banana Brownies

Adzuki Bean Brownies

Looking for a delicious, yet equally healthy treat after a healthy meal? Check out these adzuki brownies!

Ingredients:

  • 1 can Adzuki beans (drained and rinsed)
  • 3 over-ripe bananas
  • 1/4 heaping cup coconut flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp high quality organic vanilla
  • 1 tsp baking powder
  • Toppings: Choose any of the following: nuts, vegan chocolate chips, berries, cacao nibs, shredded coconut.

Directions:

  1. Blend bananas and adzuki beans in a food processor
  2. Add remaining ingredients, blend together
  3. Line 9×5 standard bread pan with parchment paper, fill with mixture and spread evenly
  4. Add toppings of choice, or plain, both are delicious!
  5. Bake at 350 degrees for 45 minutes (they’ll be a little soft)
  6. Cool completely and refrigerate to set
  7. Enjoy!
  8. Store uneaten goodies in fridge for no more than a couple of days
